Elizabeth Cleland was a cook and teacher of cookery in Georgian Edinburgh. Her book was published in 1755 - the second printed recipe book ever published in Scotland. Scottish cooking for the gentry at that time was predominantly English, and although there is no sign of a haggis, the book has a distinctive Scottish feel. Reprinted here in facsimile, with a substantial introduction by Peter Brear, it offers a view - from the kitchen - of the domestic history of 18th century Scotland.
